Tunisian Salad - cooking recipe

Ingredients
    2 granny smith apples
    2 cucumbers
    2 tomatoes
    1 bell pepper
    1/2 purple onion
    Dressing
    2 lemons, juice of
    1/8 cup tarragon vinegar
    1/4 cup olive oil, scant
    1 teaspoon salt
    1 -2 tablespoon mint, finely ground
Preparation
    Peel and chop apples and vegetables very fine.
    Mix dressing and pour over salad.
    Let stand at least 2 hours before serving.
