Super Easy One-Dish Breakfast - cooking recipe

Ingredients
    1 lb potato, peeled and cut into bite sized pieces
    1 small onion, diced
    1 lb ham, cubed
    8 large eggs, beaten
    1 tablespoon safflower oil
Preparation
    Brown potatoes and onions in oil until potatoes are almost done. Add ham and heat until potatoes are done cooking. Pour eggs over all, stirring continuously until they are done.
    Serve hot!
