Hummus Crushed New Potatoes - cooking recipe
Ingredients

1 lb new potato
3 tablespoons hummus
10 green olives, pitted and chopped
1/2 ounce flat leaf parsley, chopped
salt and pepper
Preparation

Cook the potatoes in boiling salted water for 15 mins or until tender.
Drain well, return to the pan and gently crush with a fork.
Stir through the hummus, olives and parsley then season well.
Serve.
