Healthy Apple-Raisin Oat Bran Muffins - cooking recipe

Ingredients
    1/2 cup flour
    1/2 cup oat bran
    1 1/4 teaspoons baking powder
    1/8 teaspoon baking soda
    1/4 teaspoon salt
    1/4 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1 egg white
    2 tablespoons molasses
    1/2 cup raisins
    1/2 cup buttermilk
    2 tablespoons coconut oil
    1 large granny smith apple, chopped
Preparation
    In a small bowl combine the first 7, dry ingredients.
    In a another bowl whisk the egg white, molasses, raisins, buttermilk, and coconut oil.
    Add the dry ingredients into wet mixture and stir until just moistened.
    Fold in chopped apple.
    Coat 6 cup muffin tins with cooking spray and fill 3/4 full with batter.
    Bake at 375 for 16-18 minutes or until a toothpick comes out clean.
    Cool.
    Serve warm.
