Easy Onion Relish - cooking recipe

Ingredients
    2 lbs large sweet onions, chopped
    2 celery ribs, chopped finely
    1 medium red bell pepper, chopped
    1 -2 tablespoon melted butter
    3/4 cup apple cider vinegar
    1/4 cup water
    2 tablespoons brown sugar (or to taste)
    1 teaspoon celery seed
    1/4 teaspoon salt (or to taste)
Preparation
    Saute onions, celery and red bell pepper in the butter in a Dutch oven for about 15 minutes or until tender (do not brown).
    Add in vinegar and remaining ingredients to the mixture; bring to a boil, reduce heat and simmer uncovered for about 20 minutes.
    Store in refrigerator for 1 day before using.
    Serve chilled or at room temperature.
