Mom'S Chicken And Rice Casserole - cooking recipe

Ingredients
    3 lbs boneless skinless chicken breasts
    1 cup water
    1 cup dry sherry
    1 1/2 teaspoons salt
    1/2 teaspoon curry powder
    1 medium onion, sliced
    1/2 cup celery, diced
    1 lb mushroom, chopped
    1/4 cup unsalted butter
    2 (4 1/3 ounce) packages long grain and wild rice blend
    1 cup sour cream
    1 (10 1/2 ounce) can cream of mushroom soup
Preparation
    Place chicken and next 6 ingredients in a pot and simmer for 30-40 minutes.
    Remove chicken and strain broth and reserve.
    Chop or shred chicken.
    Melt butter, in a small skillet and saute mushrooms till done (about 3-5 minutes).
    Cook Rice according to package directions - using reserved broth as liquid - add more water if necessary.
    Combine chicken, rice, mushrooms, sour cream, and soup and put in a 4 quart casserole dish.
    Garnish with parmesan cheese, if desired. Bake 350 1 hour.
