1/4 cup white wine vinegar
1 tablespoon honey
1 tablespoon coarse ground mustard or 1 tablespoon Dijon mustard
1/4 teaspoon sea salt
1/8 teaspoon fresh ground black pepper
3/4 cup olive oil, extra virgin
Preparation

Mix the vinegar through the salt and pepper in a small bowl with tall sides.
Wisk in the olive oil until it emulsifies.
Refrigerate and allow the flavors to develop.
