Sweet Shallot & Ricotta Pasta - cooking recipe
Ingredients

12 shallots, peeled
2 teaspoons olive oil
2 teaspoons brown sugar
2 sprigs thyme or 2 sprigs rosemary
1 teaspoon parmesan cheese
7 ounces linguine
8 ounces ricotta cheese
salt and pepper
Preparation

Halve the shallots and cook in a little oil for about 5 minutes.
Add the brown sugar and thyme and keep cooking and stirring until the shallots are tender and caramelized.
Cook the linguine to packet instructions then tip into the pan.
Add the shallots, salt and pepper and toss.
Divide into bowls then add ricotta in blobs and sprinkle on the parmesan.
