Houston'S Spicy Caesar Dressing - cooking recipe

Ingredients
    1 egg yolk (optional)
    1 tablespoon garlic, minced
    2 teaspoons Dijon mustard
    2 anchovy fillets, minced
    1 1/2 teaspoons pepper, coarsely ground
    1/4 teaspoon salt
    1/2 teaspoon coriander, ground
    1/2 teaspoon cumin, ground
    1 teaspoon Worcestershire sauce
    2 teaspoons water, cold
    1/2 cup olive oil, extra virgin
    1/2 cup canola oil
    1 1/2 tablespoons sambal chili paste (Thai chili paste available at Asian markets)
    1/2 lemon, juiced
    1/2 lime, juiced
    3 tablespoons parmesan cheese, freshly grated
Preparation
    Combine yolk, garlic, mustard, anchovies, pepper, salt, coriander, cumin, worcestershire sauce and water in a food processor. Process until smooth. With motor running, pour oils in a slow, steady stream into dressing mixture. When all oil has been incorporated, add chili paste, lemon juice, lime juice, and parmesan cheese. Process until smooth.
