Ingredients

2 cups yellow split peas
1 (14 ounce) can light coconut milk
4 cups low sodium vegetable broth
1 small yellow onion, slices
3 garlic cloves, pressed
1 tablespoon fresh ginger
2 teaspoons turmeric
1 teaspoon salt
4 tablespoons cilantro, for garnish
Preparation

Combine all ingredients except for cilantro in saucepan and bring to a boil.
Simmer uncovered about 30 minutes, or until peas are tender and it begins to thicken.
Serve over brown rice and garnish with cilantro.
