Spicy Chorizo Sausage - cooking recipe
Ingredients

5 lbs pork
1 cup white wine, cold
8 teaspoons paprika
4 teaspoons salt
5 teaspoons garlic, minced
4 teaspoons cayenne
2 teaspoons cumin
2 teaspoons dried oregano
1 teaspoon ground black pepper
Preparation

Mix all ingredients by hand until well mixed.
Refrigerate overnight.
Place in hog casings if desired. I freeze bulk sausage in 1/2 pound packages.
