Baked Arroz Con Pollo - cooking recipe

Ingredients
    3 cups shredded cooked chicken
    1 teaspoon salt
    2 tablespoons olive oil
    1 medium onion
    2 cloves garlic, minced
    1 small green pepper, chopped
    1/2 cup canned tomato
    4 cups chicken broth
    1 bay leaf
    1 (10 ounce) package yellow rice
Preparation
    Saute veggies in oil.
    Add broth, tomatoes and bay leaf.
    Bring to a boil.
    Spread rice in a 9X13\" casserole pan.
    Pour hot liquid over all, stir well.
    Add chicken, mix.
    Bake at 350\u00b0 for one hour.
