Pl'S Vegetarian Salsa Stir-Fry - cooking recipe
Ingredients

1 tablespoon oil
1 onion, thinly sliced
2 garlic cloves, crushed
8 -10 portabella mushrooms, thinly sliced
1 carrot, thinly sliced
1 -2 zucchini, thinly sliced
1 small green bell pepper, thinly sliced
1 small red bell pepper, thinly sliced
1 small orange bell pepper, thinly sliced
1 (300 g) container salsa
rice, to serve
Preparation

Heat a skillet over medium-high heat and add the oil.
Add onion and garlic, and cook, stirring, until tender.
Add the mushrooms and stir for 3-5 minutes.
Add the carrot, zucchini and bell peppers, and stir until tender, and carrot isn't 'hard'.
Remove from heat and add the salsa, stirring to mix it inches.
Replace on heat and simmer for 5-10 minutes.
Remove from heat and serve with rice.
