Sesame Noodle Soup With Vegetables - cooking recipe

Ingredients
    1/2 cup sliced green onion
    4 garlic cloves, minced
    1 tablespoon sesame oil
    2 1/2 cups thinly sliced napa cabbage
    1 cup chopped red bell pepper
    1 cup julienned carrot
    1 cup sliced cremini mushrooms or 1 cup shiitake mushroom
    3 (14 ounce) cans vegetable broth
    12 ounces fresh Chinese noodles
    salt and pepper
Preparation
    Saute green onions and garlic in sesame oil until tender, about 5 minutes.
    Add cabbage, bell pepper, carrots and mushrooms and saute until vegetables are crisp-tender, about 5 minutes.
    Add vegetable broth to saucepan; heat to boiling.
    Stir in noodles; return to boiling.
    Reduce heat and simmer, uncovered, until noodles are just tender, 1-2 minutes. Season to taste with salt and pepper.
