Sweet Potato Soup - cooking recipe

Ingredients
    2 lbs sweet potatoes, peeled and chopped
    2 teaspoons oil
    1 -2 tablespoon grated ginger (, depending on your love of ginger)
    1 -2 red chile, chopped (depending on your love of hot)
    2 teaspoons cumin seeds
    2 stalks lemongrass, finely chopped or 1 1/2 tbsp of lemon grass in a jar
    2 cups vegetable stock
    2 cups coconut milk
    1 tablespoon brown sugar
    1/2 cup fresh coriander (cilantro)
Preparation
    Place sweet potato in a pot of boiling water and boil until tender.
    (10-15 minutes) Drain and set aside.
    Heat oil over medium heat in a saucepan.
    Add ginger, cumin, chillies and lemon grass, cook for 3 minutes.
    Place the sweet potato and spice mixture in a food processor or blender and process with a little of the stock until smooth.
    Place the mixture in a saucepan over medium heat.
    Add remaining stock, coconut milk and brown sugar, stir until soup is simmering and hot.
    Stir through coriander and serve.
