Dominican Delight - cooking recipe

Ingredients
    1 tablespoon olive oil
    10 ounces diced cooked ham
    1 medium onion, chopped
    1 (15.5 ounce) can low-sodium kidney beans, rinsed and drained
    3 sprigs cilantro, chopped
    1/2 cup sofrito sauce
    1 tablespoon distilled white vinegar
    1 (5.4 ounce) package Knorr(R) Fiesta SidesTM - Mexican Rice
Preparation
    Heat oil in a large skillet over medium heat. Add ham and onion. Saute until ham is browned and onion is softened, about 5 minutes. Add beans, cilantro, sofrito, and vinegar. Cook 5 minutes.
    Stir in rice and water. Bring to a boil, reduce heat, and simmer, covered, until rice is tender, about 15 minutes. Garnish with additional cilantro if desired.
