2 bunches kale, stems removed and leaves finely shredded
1 (15 ounce) can crushed pineapple, undrained
1/3 cup lemon juice
1/4 cup sunflower seed oil
1/2 cup sunflower seeds, or to taste (optional)

Place shredded kale in a large bowl. Mix pineapple, lemon juice, and sunflower oil together in a bowl; pour over kale and toss. Sprinkle sunflower seeds over salad.
