Oven-Grilled Chicken And Vegetables - cooking recipe

Ingredients
    1 (14 ounce) bag Birds Eye(R) Recipe Ready Grilling Blend
    1 pound boneless, skinless chicken breast halves, cut into bite-sized pieces
    2 tablespoons olive oil
    1 tablespoon balsamic or red wine vinegar
    1/2 teaspoon salt
    1/8 teaspoon black pepper
    2 tablespoons shredded Parmesan cheese (optional)
Preparation
    Preheat oven broiler.
    Combine all ingredients, except Parmesan cheese, in large bowl; toss to coat.
    Transfer vegetables and chicken to broiler pan. Broil, stirring and turning vegetables once, 10 minutes or until chicken is done and vegetables are tender.* Sprinkle with Parmesan cheese.
