Blt Salad With Sweet Onion Vinaigrette - cooking recipe

Ingredients
    Dressing:
    2 tablespoons apple cider vinegar
    1 1/2 tablespoons honey
    2 tablespoons finely chopped sweet onion
    2 teaspoons coarse-grain mustard
    1/4 teaspoon salt
    1/4 teaspoon ground black pepper
    1/4 cup olive oil
    Salad:
    4 hard-cooked eggs, peeled
    8 cups mixed greens
    1 1/2 cups grape tomatoes, halved
    4 slices bacon, cooked and chopped
Preparation
    Dressing: In a small bowl combine apple cider vinegar, honey, onion, mustard, salt and pepper. Slowly whisk in oil. Set aside.
    Salad: Finely grate or chop 2 eggs; slice remaining 2 eggs. In a large salad bowl, combine greens, tomatoes, bacon and grated eggs. Toss with dressing to coat and garnish with remaining egg slices. Serve immediately.
