Ingredients
    1 egg
    1/4 cup golden flaxseed meal
    1 tablespoon unsweetened coconut flakes
    1 teaspoon coconut oil
    1 teaspoon unsweetened coconut milk beverage (such as Silk(R))
    1 teaspoon vanilla extract
    1/2 teaspoon baking powder
    1/2 teaspoon stevia powder
Preparation
    Combine egg, flaxseed meal, coconut flakes, coconut oil, coconut beverage, vanilla extract, baking powder, and stevia in a bowl; mix well. Pour batter into a microwave-safe mug.
    Cook in a microwave oven on high for 1 minute.
