1 flat bread pizza crust (such as Flatout(R) Flatbread Thin Crust Flatbread)
1/4 cup crushed tomatoes with roasted garlic and olive oil (such as Furmano's(R))
1/4 cup chopped fresh spinach
1/4 cup fresh chopped broccoli
1/4 cup finely chopped yellow bell pepper
1/4 cup finely chopped orange bell pepper
1/4 cup chopped eggplant
9 slices pepperoni, chopped
1/4 teaspoon dried oregano
3/4 cup shredded mozzarella cheese
Preparation

Preheat oven to 350 degrees F (175 degrees C).
Place pizza crust on a baking sheet and spread tomatoes onto crust. Layer spinach, broccoli, yellow bell pepper, orange bell pepper, eggplant, pepperoni, and oregano onto crust; top with mozzarella cheese.
Bake in the preheated oven until cheese is melted, 7 to 10 minutes.
