Mediterranean Tuna Pizza - cooking recipe

Ingredients
    1 (5 ounce) can Bumble Bee(R) Solid White Albacore Tuna in Water, drained and chunked
    1 pizza crust (homemade, from a can, or premade crust)
    2 1/2 tablespoons extra-virgin olive oil, divided
    1 cup spinach, stems removed, leaves torn into bite-size pieces
    1 red onion, chopped
    2 teaspoons jarred minced garlic or fresh
    1 roma (plum) tomato, chopped
    2 leeks (white and pale green parts only), thinly sliced
    Salt to taste
    1/2 cup crumbled feta cheese
    Shredded Parmesan cheese (optional)
Preparation
    Preheat oven to 425 degrees F (220 degrees C).
    Prepare pizza crust according to package directions. Brush with 1 tablespoon olive oil and spread spinach over top.
    Combine remaining 1 1/2 tablespoon olive oil, red onion, garlic, tomato, leeks, tuna, and salt in a small bowl. Spread evenly over pizza crust. Top with crumbled feta cheese and shredded Parmesan cheese, if using.
    Bake in preheated oven 15 minutes, or as directed on crust package. Slice and serve!
