Red Cabbage Mango Pistachio Salad - cooking recipe

1/2 large head red cabbage, shredded
1 mango - peeled, seeded, and cut into wedges
1/4 cup roasted, shelled pistachios
1 tablespoon chopped fresh mint, or to taste (optional)
2 tablespoons truffle oil
1 tablespoon agave nectar
1 tablespoon lime juice
1 tablespoon champagne vinegar
1/2 teaspoon salt
1 sprig fresh mint
Preparation

Stir red cabbage, mango, pistachios, and 1 tablespoon mint together in a large salad bowl.
Whisk truffle oil, agave nectar, lime juice, champagne vinegar, and salt in a small bowl and pour dressing over salad; toss to combine. Garnish with 1 sprig fresh mint.
