Quick Mediterranean Vegetables - cooking recipe

Ingredients
    1 tablespoon olive oil
    1/2 onion, chopped
    2 carrots, sliced
    1 green bell pepper, cubed
    1 red bell pepper, cubed
    1 fennel bulb, thinly sliced
    2 teaspoons dried Italian herb mix, or to taste
    salt and freshly ground black pepper to taste
Preparation
    Heat olive oil in a large skillet and cook onion until soft and translucent, about 5 minutes. Add carrots, bell peppers, and fennel; cook, stirring occasionally, until softened but still firm to the bite, 5 to 10 minutes. Season with Italian herbs, salt, and pepper.
