Quinoa, Grape, And Prune Salad - cooking recipe

Ingredients
    Salad:
    2 cups water
    1 cup quinoa
    1 cup halved red grapes
    1/2 cup Sunsweet(R) D'NoirTM Prunes, chopped
    1/2 cup thinly sliced celery
    1/2 cup sliced green onion
    1/2 cup chopped toasted walnuts
    Dressing:
    1/3 cup extra-virgin olive oil
    1/4 cup red wine vinegar
    1 tablespoon honey
    1/2 teaspoon salt, or to taste
    1 clove garlic, minced
    Freshly ground black pepper to taste
Preparation
    Rinse quinoa in a fine mesh strainer; drain well. Bring water and quinoa to a boil in a medium saucepan; reduce heat and simmer, covered, for 12 minutes. Let stand for 10 minutes, then fluff with a fork and let cool.
    Place in a large bowl with remaining salad ingredients. Whisk together all dressing ingredients and pour over salad; toss well to coat. Cover and chill for at least 1 hour.
