Easy Cranberry-Coconut Oatmeal Cookies - cooking recipe

1 1/2 cups unsweetened applesauce
1 cup unsweetened flaked coconut
1 cup cranberries
1 cup rolled oats
1 cup white whole wheat flour
2 egg whites
1 tablespoon honey (optional)
1 1/2 teaspoons ground cinnamon (optional)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla extract
Preparation

Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
Mix applesauce, coconut, cranberries, oats, flour, egg whites, honey, cinnamon, baking soda, baking powder, salt, and vanilla extract together in a large bowl until well combined. Drop tablespoonfuls of batter 2 inches apart onto prepared baking sheet.
Bake in the preheated oven until edges are golden, 12 to 15 minutes.
