Mauigirl'S Mango Salsa - cooking recipe

Ingredients
    2 cups chopped ripe mango
    1/4 cup chopped sweet onion (such as Maui)
    1/4 cup finely chopped red bell pepper
    1/4 cup chopped fresh cilantro
    2 tablespoons lime juice
    1 jalapeno pepper, seeded and finely chopped
    1 teaspoon grated lime zest
    1 teaspoon grated fresh ginger
Preparation
    Stir mango, onion, bell pepper, cilantro, lime juice, jalapeno pepper, lime zest, and ginger in a bowl; cover and chill for 8 hours to overnight.
