Oregon Trail Gazpacho - cooking recipe

Ingredients
    1 cucumber, diced
    2 Roma tomatoes, diced
    1 small sweet onion (such as Vidalia(R)), diced
    3 tablespoons red wine vinegar
    2 tablespoons extra-virgin olive oil
    1 clove garlic, crushed
    2 leaves fresh basil, chopped
    1/2 teaspoon Italian seasoning
    1/8 teaspoon freshly ground black pepper
    1/8 teaspoon salt (optional)
Preparation
    Combine cucumber, tomatoes, sweet onion, vinegar, olive oil, garlic, basil, Italian seasoning, black pepper, and salt in a bowl; refrigerate until chilled, at least 30 minutes.
