Oven Roasted Baked Potatoes - cooking recipe

Ingredients
    8 fingerling potatoes, cubed
    1 large onion, cubed
    2 tablespoons coconut oil, melted
    2 tablespoons minced garlic
    1 tablespoon sea salt
Preparation
    Preheat oven to 350 degrees F (175 degrees C). Line a large baking sheet with foil.
    Toss fingerling potatoes, onion, coconut oil, garlic, and sea salt in a large bowl. Spread mixture onto baking sheet; bake, stirring every 10 minutes, until potatoes are tender, about 30 to 40 minutes.
