2 cups quick-cooking rolled oats
3 large bananas, mashed (optional)
1/2 cup shredded coconut
1/4 cup chopped pitted dates
1/4 cup chopped walnuts
3 tablespoons agave nectar
1 teaspoon vanilla extract (optional)
1 pinch ground nutmeg, or to taste
1 pinch salt
Preparation

Preheat oven to 350 degrees F (175 degrees C).
Mix oats, bananas, coconut, dates, walnuts, agave, vanilla extract, nutmeg, and salt together in a bowl by hand; press into a 9-inch square baking dish.
Bake in preheated oven until browned on top, about 30 minutes.
Cool in baking dish on a wire rack until completely cooled before cutting into bars.
