Non-Traditional Tabbouleh Salad With Pineapple And Pomegranate Seeds - cooking recipe

3 cups chopped flat-leaf parsley
2 cups finely chopped small cucumber
2 cups finely chopped pineapple
2 cups pomegranate seeds
1/2 cup minced onion
1/4 cup minced fresh mint leaves
2/3 cup olive oil
1/2 cup fresh lemon juice, or to taste
salt and ground black pepper to taste
Preparation

Mix parsley, cucumber, pineapple, pomegranate seeds, onion, and mint in a large bowl. Drizzle olive oil and lemon juice over the salad and toss to coat; season with salt and pepper.
Refrigerate salad until chilled, at least 15 minutes.
