2 cups spring mix
3/4 cup cherry tomatoes, halved
2/3 cup chopped cucumber
1/2 cup sliced salami
1/3 cup chopped red onion
1/3 cup blue cheese
1/3 cup red wine vinegar
1 tablespoon extra-virgin olive oil
Preparation

Combine spring mix, tomatoes, cucumber, salami, onion, and blue cheese in a bowl. Whisk vinegar and oil together in a small bowl and pour over salad; toss to coat.
