Dreamy, Creamy Cauliflower Tortillas - cooking recipe

Ingredients
    1 head cauliflower, finely grated
    2 eggs
    salt
    1 pinch ground black pepper
Preparation
    Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
    Place cauliflower in a microwave-safe bowl. Microwave at maximum power until tender, about 4 minutes. Place on a kitchen towel and squeeze out all liquid; transfer to a bowl.
    Whisk eggs, salt, and black pepper in a bowl. Add to the cauliflower in batches; stir well. Shape cauliflower mixture into 3-inch tortillas on the prepared baking sheet.
    Bake in the preheated oven until set, about 20 minutes. Let cool slightly.
    Heat a skillet over medium heat. Cook tortillas until golden brown, about 1 minute. Flip and cook for 1 minute more.
