Chicken Creole - cooking recipe
Ingredients

1 c. chopped onion
1 c. chopped celery
1/4 to 1/2 c. chopped green peppers
1/4 c. margarine
1 chicken or 4 chicken breasts, cooked and diced
2 c. chicken broth
1 can cream of chicken soup
1 can Ro-Tel tomatoes (with green chilies)
1 can tomato sauce
Preparation

Saute onion, celery and peppers in margarine.
Gradually add remaining ingredients.
Simmer on stove for 1 to 2 hours.
Add salt and pepper to taste.
If too thin, add a cornstarch mixture to thicken.
If too thick, add more broth.
Serve over rice.
