Teresa'S Low-Fat Spaghetti Sauce - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 large onion, finely chopped
    2 large cloves garlic, crushed
    1 (6 oz.) tomato paste
    2 Tbsp. finely chopped parsley
    1 tsp. dried oregano
    1/2 tsp. dried basil
    1/4 tsp. salt
    1/8 tsp. pepper
    1 (16 oz.) can tomatoes with juice, chopped
    1 (8 oz.) can tomato sauce
    1 bay leaf
    1 c. water
Preparation
    In 4-quart pan over medium heat, heat oil, add onions and garlic.
    Cook 4 to 5 minutes, stirring occasionally until onions are soft.
    Stir in tomato paste, parsley, basil, oregano, salt and pepper.
    Cook 3 minutes, stirring often.
    Add tomatoes with liquid, tomato sauce, 1 cup water and bay leaf; increase heat to medium high and bring to a boil.
    Reduce heat to low.
    Simmer, partially covered, several hours.
    Stir often.
    Makes 4 cups.
