Red Beans And Rice - cooking recipe
Ingredients

1 lb. dry red beans (soaked overnight)
Ham bone or hock
2 medium onions, chopped
2 cloves garlic (or 1 tsp. powder)
1/2 tsp. red pepper (or to taste)
1 lb. smoked sausage, cooked (sliced in circles)
Dash of Tabasco
Salt to taste
1 c. bell pepper, chopped
Hot cooked rice
Preparation

Cover beans (after soaking overnight) with water and add ham bone or ham hock, onions, bell pepper, garlic, red pepper and Tabasco.
Cook slowly for several hours until tender.
Add salt AFTER beans are cooked.
Add cooked sausage and serve over hot rice.
