Gnocchi - cooking recipe

Ingredients
    6 to 12 Idaho potatoes (2 1/2 to 5 lb.)
    4 c. flour
    1 handful grated cheese
    2 Tbsp. salt
    2 eggs
Preparation
    Wash potatoes; leave skin on.
    Boil in approximately 1/2 inch of water.
    Peel while hot, then mash potatoes; let cool.
    Then add 4 cups of flour, grated cheese, salt and eggs.
    Knead together until large dough ball is formed.
    Roll segments into long strips. Cut strips into gnocchi size (1/4 inch).
    Place pieces into floured pan.
    Leave in cool place until ready to cook. Cook in boiling water for 5 minutes (stir one time).
    Serve in sauce.
