Gablehouse Zucchini Bisque(Soup) - cooking recipe
Ingredients

1/2 lb. onions (2 medium)
1 1/2 lb. zucchini squash
1/2 c. half and half
1/8 tsp. nutmeg
pinch of cayenne pepper
grated Cheddar cheese
2 Tbsp. butter
3 c. chicken broth
1/8 tsp. pepper
1/8 tsp. salt
sour cream
Preparation

Chop and cook onion in butter until clear and soft, but not browned.
Wash and slice zucchini.
Combine onion, zucchini and chicken broth in heavy saucepan and bring to boil, then simmer for 15 minutes or until squash is tender.
Add the seasonings and put mixture into blender to puree until smooth.
Add half and half; adjust seasonings to taste and reheat, but do not boil.
Serve immediately, garnished with grated Cheddar cheese and a dab of sour cream.
