Hot Water Sponge Cake - cooking recipe

Ingredients
    3 eggs
    3/4 c. sugar
    1/3 c. hot water or hot milk
    1 tsp. vanilla
    1/2 tsp. lemon extract
    1 1/4 c. cake flour
    1 1/2 tsp. baking powder
    1/2 tsp. salt
Preparation
    Heat oven to 350\u00b0.
    Grease and flour baking pan (8 x 8 x 2-inches or 9 x 9 x 2-inches).
    Beat eggs in small mixing bowl on high speed for 5 minutes; pour into large mixer bowl.
    Beat in sugar gradually.
    Beat in water, vanilla and lemon extract on low speed.
    Beat in flour, baking powder and salt on low speed; continue beating until batter is smooth.
    Pour into prepared pan. Bake until top springs back when touched lightly in center, 25 to 30 minutes; cool.
