Pumpkin Muffins - cooking recipe
Ingredients

2 1/2 c. flour
2 c. sugar
1/4 tsp. nutmeg
1/4 tsp. ground cloves
1/2 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs, slightly beaten
1 c. Libby's pumpkin pie filling
1/2 c. vegetable oil
2 c. Granny Smith apples, diced
2 c. walnuts, minced in food processor
Preparation

Combine
first

ingredients;
set aside.
In another bowl, combine
eggs, pumpkin and oil.
Add the liquid ingredients to the dry ingredients;
stir in the apples and the nuts. Bake at 350\u00b0 in
greased
muffin
tins
for 35 to 40 minutes. Yields 24 to 36 mini-muffins or 18 large muffins.
