High Fiber Bran Muffins - cooking recipe
Ingredients

2 c. unsifted all-purpose flour (I use wheat flour)
1/3 c. sugar
1 tsp. baking soda
1 c. whole bran cereal or wheat germ
1/2 c. each: raisins, dried prunes and apricots
2 eggs, lightly beaten (artificial eggs may be used)
1 1/3 c. buttermilk
1 tsp. salt
1 1/2 c. uncooked oats
1/2 c. light molasses
Preparation

Preheat oven to 350\u00b0.
In a mixing bowl, combine the flour, sugar, salt and baking soda.
Stir in the oats, bran cereal and fruit.
Combine eggs, buttermilk and molasses.
Add to dry ingredients; stir just until the dry ingredients are moistened. Spoon the batter into greased muffin cups about 2/3 full.
Bake for 15 to 20 minutes, or until a toothpick inserted comes out clean.
Makes about 20 muffins, with 130 calories each.
Leftover muffins can be frozen and reheated in a 350\u00b0 oven.
