Hearty Beef Vegetable Soup - cooking recipe
Ingredients

2 to 3 lb. beef bones
10 to 12 cups water
4 beef bouillon cubes
2 medium onions
2 c. carrots, thinly sliced
2 c. broccoli flowerets
2 c. brown and wild rice
pepper to taste
salt to taste
2 Tbsp. basil leaves
Preparation

In large stock pot, combine beef bones, water and any stems and/or leaves from vegetables.
Bring to boil.
Reduce heat and simmer for 2 hours.
Remove meat from bones.
Strain broth and refrigerate for 2 to 3 hours.
Skim fat from broth.
Return to heat.
Add bouillon cubes, rice and seasonings.
Simmer until rice is tender.
Add vegetables and continue simmering until done. Makes approximately 4 quarts.
Freezes well.
A great project for a \"cabin fever afternoon.\"
