Beef Short Ribs With Raisin Sauce - cooking recipe

Ingredients
    3 lb. beef short ribs
    3 Tbsp. fat
    salt and pepper
    1 onion, quartered
    1/2 c. brown sugar
    1 tsp. dry mustard
    1/2 c. raisins
    1 Tbsp. flour
    2 Tbsp. vinegar
    2 Tbsp. lemon juice (optional)
    1/4 tsp. grated lemon rind
    1 bay leaf
    1 1/2 c. water
Preparation
    Cut ribs into serving pieces.
    Brown in hot fat.
    Pour off drippings. Season ribs with salt and pepper.
    Add onion.
    Combine remaining ingredients and bring to boil.
    Pour over ribs.
    Cover tightly and cook slowly for about 2 hours or until meat is tender. Thicken sauce, if desired.
    Makes 6 to 8 servings.
