Shrimp In Beer Batter - cooking recipe

Ingredients
    24 large shrimp or 2 lb.
    1 c. flour
    salt and ground pepper to taste
    1/4 tsp. freshly grated nutmeg
    1 Tbsp. ground coriander
    1/2 c. beer
    1 tsp. vegetable or corn oil, plus enough oil for deep frying
    2 egg whites
Preparation
    Peel and devein the shrimp.
    Put flour in mixing bowl.
    Add salt, pepper, nutmeg and coriander.
    Gradually add the beer, stirring with a wire whisk until smooth.
    Brush the top of the batter with 1 teaspoon oil.
    This prevents gas from escaping. Cover with plastic wrap and let stand in warm place for 30 minutes.
