Pumpkin Roll - cooking recipe

Ingredients
    2/3 c. pumpkin
    3 eggs
    1 c. sugar
    3/4 c. plain flour
    1 tsp. soda
    1 Tbsp. ground cinnamon
    8 oz. cream cheese
    2 Tbsp. margarine
    1 tsp. vanilla
    1 c. confectioners sugar
    nuts (optional)
Preparation
    Mix first 6 ingredients. Grease a large bread pan (one with a rim). Line pan with wax paper or foil. Grease paper or spray with Pam. Pour batter into pan. (Should be very thin.) Cook 12 to 15 minutes at 375\u00b0. DO NOT OVERCOOK. Cool about 5 minutes. Turn cake out onto a clean thin towel and remove foil. Roll cake up in the towel (like a jellyroll). Mix cream cheese, margarine, vanilla and confectioners sugar. Unroll cake and spread with filling, keeping thin near the edges so it doesn't squish out. Re-roll and refrigerate.
