Chicken Breasts Diane - cooking recipe

Ingredients
    4 large boneless chicken breast halves or 8 small
    1/2 tsp. salt
    1/2 tsp. pepper
    2 Tbsp. salad oil
    2 Tbsp. butter or margarine
    3 Tbsp. chopped green onions
    3 Tbsp. chopped parsley
    2 tsp. Dijon mustard
    1/4 c. broth
    1/2 lime or lemon juice
Preparation
    Pound breast halves slightly.
    Sprinkle with salt and pepper. Heat 1 tablespoon oil and butter in large skillet.
    Cook chicken on high for 3 or 4 minutes on each side.
    (Take chicken out.)
    Add onion, lime juice, parsley and mustard to pan.
    Cook 15 seconds, whisking constantly.
    Add broth, butter and oil, whisking constantly.
    Pour sauce over chicken.
    Serve immediately.
