Almond-Coconut Chicken - cooking recipe

Ingredients
    4 boneless chicken breasts
    1/3 c. low-fat mayonnaise
    1/4 c. pineapple juice
    2 c. cornflake crumbs
    slivered almonds, toasted
    salt, margarine and flaked coconut
Preparation
    Mix mayonnaise and juice to make a good dipping consistency. Coat chicken with mayonnaise mixture.
    Sprinkle with salt.
    Coat with crumbs.
    Place on rack and refrigerate until ready to cook. Melt some margarine in baking pan.
    Place chicken pieces in pan. Pour some melted margarine over pieces (don't crowd in pan).
    Bake at 350\u00b0 for 30 to 45 minutes.
    Garnish with toasted coconut and almonds.
