Potato Cheese Soup(Serves 4) - cooking recipe

Ingredients
    2 Tbsp. butter
    1/3 c. thinly chopped celery
    1/3 c. thinly chopped onion
    4 c. peeled Russet potatoes, cut into 1/2-inch cubes
    3 c. chicken broth
    2 c. milk
    1 1/2 tsp. salt
    1/4 tsp. pepper
    dash of paprika
    2 c. shredded sharp Cheddar cheese
    French fried onion rings or croutons (optional)
Preparation
    In a large saucepan, melt the butter.
    Add celery and onion and cook over medium heat, stirring frequently, until tender.
    Add the potatoes and chicken broth.
    Simmer until the potatoes are tender, about 10 minutes.
    Pour the mixture into a blender until smooth.
    Return to the saucepan.
    Stir in the milk and seasonings. Heat through.
    Add the cheese, stirring until it has melted.
