Spring Relish - cooking recipe

Ingredients
    4 pecks ripe tomatoes, peeled
    24 large onions
    16 bunches celery
    20 green peppers
    1/4 lb. celery seed
    1/4 lb. mustard seed
    1 1/4 gal. vinegar
    8 lb. brown sugar
    1 lb. uniodized salt
Preparation
    Chop vegetables.
    Sprinkle with salt and let stand overnight; drain.
    Dissolve sugar in vinegar and mix in celery and mustard seed.
    Mix well and seal in airtight containers.
