Fried Green Tomatoes With Cornmeal - cooking recipe

Ingredients
    4 medium green tomatoes
    2/3 c. stone-ground cornmeal
    1 1/2 tsp. salt
    1/2 tsp. pepper
    3 to 4 tsp. rendered bacon fat
Preparation
    Slice each about 1/2-inch thick, then pat cut surface dry with paper towel.
    Combine cornmeal, salt and pepper in pie plate. Dredge tomato slices in seasoned cornmeal, making sure each slice is well coated.
    Fry tomatoes quickly in sizzling hot bacon fat in heavy skillet over moderately high heat.
    Need only to brown slices on each side, about 1 to 1 1/2 minutes to each side should do it.
    Serve straight away.
